As I sit in my apartment on this rainy Sunday, I began to consider my dinner options. I suppose I could order out or pick something up, but -to tell you the truth- I’m quite sick of the dining options in the three block radius that my lazy hung over body would allow me to travel to. I’m also too hungry to wait around for a delivery man to come.

Enter the option of a home cooked meal.
At fist, this may seem like a daunting task for the average YUP who is right out of college and has depended on the campus dining hall for his for the past four years,. The one whose idea of gourmet dining is a chicken-bacon-ranch dollar slice  at 2AM in the morning. The one whose greatest culinary accomplishment was managing to figure out how to make e-z mac. If you are one those, have no fear! I have found that there are some simple meals that are perfect if you find yourself in a similar situation- these are quick, simple, and delicious! Here are a couple to start off with:

The Breakfast Burrito
Egg Beaters (see my previous post)
Wrap of your choosing (I prefer spinach wraps)
Salsa
Pepper

This masterpiece can take under 10 minutes to make and is incredibly healthy and satisfying at any time of day despite its name. Place a medium to small size wrap atop your pan1, place the cheese of your choice atop the wrap until the cheese become slightly melted. Cook up some egg beaters with whatever other ingredients you like in them (I just use the beaters and a pinch of pepper) then place atop the wrap. Top with some salsa and roll the wrap up. VoilĂ !

Chicken or Beef Fried Rice
Chicken or beef- (I’ve found that beef takes less prepping)
Rice1
Egg Beaters
Soy Vey Veri Veri Tereyaki Sauce
Vegitable oil

With Asian fusion being remarkably trendy in Manhattan, learning to prepare this dish will make you seem culinarily adept; much more so than the Spaghettios you are chomping down while reading this post. All you have to do is cook up some rice (minute rice will do but I prefer steamed2) put it in a pan1 with a little vegetable oil and pour on a half serving of egg beater. As the egg cooks you mix in a modest amount of the Soy Vey and serve in a bowl with the beef or chicken you cooked separately on top of the rice. What you will get is a very satisfying meal that you can show off to your friends or that lucky lady you invited over for dinner!

If you mastered the first two recipes and are feeling ambitious, try out this great recipe I found on the food network years ago. I have cooked it many times before and is by far my favorite dish to cook when I have a guest over. There is also a video that will help teach you how to cook it.

Both recipes require medium-to-high heat on the stove top. The rice should be cooked at high heat when mixing in with the egg.

Minute rice will work but I own a rice cooker. This device cooks rice for you in a matter of minutes and will open up the door for even more recipes. It’s also good for making a quick snack.

If anyone is going to attempt these recipes and would like measurements, pictures (which I’ll upload next time I cook these things) or advice, just leave a comment and I’ll get back to you quickly. Be sure to leave meal ideas that you use in the comments section!

  3. Hey LC sorry for the delay. It was a busy end of August: soaking up the last of the summer sun, vacations, and two fantasy football drafts. Rough life, i know. . .

The next post should be done sometime this week. It will be about going on dates in the fall and has certainly been very interesting to write.
