Eggs, in addition to every perishable item, are often hard to store since we don't eat in often enough. I suggest using egg beaters, which I found to be just as good and lasts a long time.
If you do try to grill yourself up an omelet with either the beaters or the real stuff, may I suggest you wash your spatula immediately after using it as the eggs can dry up and stick to it faster than most items! I was reminded of that first hand today as I was battling a hangover :/
